Yumalicious Margarita Shrimp Skewers Recipe

With Cinco de Mayo coming up, Jose Cuervo is looking for the best margarita recipes in time for the TwitterMoms “Cinco de Mama!” Margarita Twitter Party (#cuervo) on May 5, 2009 at 5:00 p.m. PST.

I thought I'd share this delicious recipe that my husband came up with. It's easy and tastes sooo good.

Yumalicious Margarita Shrimp Skewers
1 lb. Large Peeled and Deveined Shrimp
Skewers
3/4 Cup Jose Cuervo Golden Margarita
1/2 Stick Butter
1 Teaspoon Lemon Pepper
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
Optional: Bell Peppers and Onions cut up for skewering

Directions: Combine the Jose Cuervo Golden Margarita, butter, lemon pepper, salt, black pepper, garlic powder and onion powder in a sauce pan and simmer 3-5 minutes or until butter is melted and sauce is well combined. This will be your basting sauce. Remove from heat. Skewer your shrimp (and bell peppers and onion if you choose). Baste the skewered shrimp and veggies generously with the basting sauce then grill until grill marks appear and shrimp is thoroughly cooked (You can cook the skewers outside on a grill or inside in a grill pan).

Serve with rice if you prefer. We sometimes substitute 1/2 cup Jose Cuervo Golden Margarita for the same amount of water when cooking the rice for added flavor.

This basting sauce is also delicious on grilled chicken.
